Happy New Year!

So sorry to be MIA lately, the holidays and some design projects had totally taken me over.  But now that the tree and decorations have been put away, I can turn my focus back to the blog.

We had a snow day here in NY, so I decided to dedicate some time to my new Instant Pot! I have so many recipes pinned on Pinterest that I decided to try out 2 recipes today, a breakfast quiche and a chowder.

Lets talk about the Instant Pot 1st.  I got the 6 quart size which is perfect for meals for our size family.

 

Look at all these features!  What I love most about the Instant Pot is that I can sauté meats right inside the pot before cooking the rest of the meal.  I only have to clean ONE POT!!!! (most of the time lol)

First up is a Crustless Meat Lovers Quiche, recipe curtesy of Pressure Cooking Today.

This turned out so fluffy and flavorful!  The girls (and myself) gobbled it right up.

 

I used a souffle dish similar to this one.  It fit inside the instant pot perfectly.

Knowing my husband would be out in the cold shoveling both our home and work I wanted to make a hearty, hot chowder.  When I found this Creamy Chicken Bacon Chowder via 5 Dinners in 1 Hour, I couldn’t wait to make it.

 

One word……Amazing!

This chowder was so filling.  I’ll definitely be adding this recipe into our dinner menu rotation.

Both recipes took maybe 20-30 minutes of prep time.  Then it was all up to the Instant Pot.

 

Just a few tips.  The Instant Pot will need to build pressure before cooking.  So if a recipe calls for soup setting for 30 mins, its going to take extra time before the 30 minutes kicks in.

Also when manually venting the steam is powerful.  I like to place a dishtowel on top to prevent droplets from falling on my counters.

The main reason I like the Instant Pot more than the Crock Pot is I find that meats don’t come out as dry.  And the meals seem to have more flavor.
